Coconut is such an understated ingredient that I think from time to time we forget about. I rarely see coconut being used in recipe development and I always question why?!
Does it have to do with coconut shelf life being so short, that companies veer away from the ingredient all together? Or is it such a distinct taste that you fear it will overpower your recipe?
Either way, no excuse is good enough. Coconut is a delicacy in many countries. The ingredient is so versatile that it can be extracted or incorporated in so many ways.
When it comes to cocktails, coconut can be incorporated in so many ways including:
Coconut Whipping Cream
Condensed Coconut Milk
Desiccated Coconut ( for garnish)
But before we jump into the recipe, I have to just highlight that Cup of Te's Luxe Cold Brew Tea Infuser is one of our favourite and most used travel items for Spring and Summer. Unlike any of the other infusers in the market, Cup of Te's just feels so right.

Well the last thing we would want is to burn our mouth while trying to take a sip out of a bottle where the neck is metal. If you forget your infuser outside or you plan on being out for a long period of time, the bottle may heat up and vice versa during the colder winter months.

Spiked Creamy Coconut Tea Cocktail Recipe:
1-2 Spoons of Cup of Te Coconutty Creme Loose Leaf Tea
2 oz Malibu Rum
1/2 Cups of Whipped Cream of Coconut
Coconut Flakes for garnish
How to Steep Tea in Luxe Infuser
Scoop approximately 15g of Coconutty Creme loose leaf tea into the ultra-fine mesh filter.
Fill Luxe Cold Brew Tea Infuser up (enough room for mesh filter to go in without overflowing)
Steep in fridge for 3 to 6 hours for taste or 24 hours for full flavour potency.
Crafting your Cocktail:
In a tall glass add 2 handfuls of ice (crushed or cubed)
Fill 3 quarters of the glass with Cup of Te Coconutty Creme Loose Leaf Tea
Add 2 oz of Malibu Rum
Add 1/2 cup of whipped cream of coconut
Garnish with roasted coconut flakes
