I’ve been eager to make this dish for sometime now, but it has been extremely hard to develop a recipe when you’re missing that ONE perfect ingredient that ties everything together.
Both @Anu.eats and I have been going back and forth creating marinades, sauces and even infused oils in order to get the perfect sticky yet crunchy whole fish recipe to share with all of you.
It was a match made in heaven when we took to Instagram one evening and noticed that @Drizzle_Honey was launching their highly anticipated honey infused with chilis. We both knew right away we needed to get our hands on Drizzle new honey in order to re-test our recipe.
After doing a little taste testing - we knew that the perfect pairing for something as sweet and spicy as Drizzle honey was worth pairing with something hot, crunchy and loaded with flavour which came to be our Stuffed Honey Chili Fish.
HERE’S THE RECIPE:
3 Whole Fish (scaled & gutted)
1 Cup chopped garlic
1 Cup chopped ginger
1 Cup chopped red onions
1 Cup @Drizzle_honey hot chili honey
3 Tablespoons of salt
2 Tablespoons of black pepper
Handful of fresh herbs (coriander)
STEPS & INSTRUCTIONS:
Start off by washing your whole fish in a salt and lemon water bath, squeeze a full lemon and let your fish sit for about 20 minutes. Rub the salt and lemon on the scales to remove any dirt and unwanted smells.
After 20 minutes rewash your whole fish in cold water to remove any left over salt and lemon and begin descaling the skin. Take the dull side of your knife and slowly begin to rub the fish skin to remove scales.
Once your fish is descaled and smooth, start by making a vertical cut down the bottom side of your fish, gutting out the insides. Remove the eyes, the bottom fins and thoroughly wash the inside of the fish.
Once your fish is clean and gutted, start by adding some salt followed by black pepper to begin the seasoning process. Add a cup of garlic, ginger and red onions and be sure to lather your chopped ingredients on both the outside as well as the inside of your fish.
Heat up (in the microwave) one cup of @drizzle_honey chili honey and pour overtop your stuffed fish. Let it sit for 5 minutes so that the honey has time to soak into the skin and the inside of your fish.
After 5 minutes, lather 3 sheets of tinfoil in oil and wrap your stuffed whole fish individually. Add your wrapped fish to your grill or barbecue on the top shelf and cover for 15 minutes.
After 15 minutes, unwrap the whole fish and base with @drizzle_honey chili honey for a second coating. After lathering for the second time, place your fish on the lower grill on direct heat for 5-6 minutes.
Serve with a side of plain white rice and be sure to drizzle some extra honey overtop for a crunchy, sticky and spicy stuffed honey chili infused fish.
